Almond & Oat Cookie Recipe For Fussy Eaters

These almond and oat cookies are a go-to at my house! With two fussy eaters, I'm always on the lookout for sneaky ways to get some extra goodness into them, snacks that are healthy and, of course, beige!🤣

They're perfect for kids (and adults, too!) whether you need a wholesome snack or a delicious treat to pop into lunch boxes. Because they're made with oats, they're nice and filling. Plus, they're packed with all the good stuff like manganese, phosphorus, magnesium, iron, and B vitamins, not to mention loads of fibre!



This recipe is quick and simple, little hands can also help out!

Grab these ingredients:

  • 170g porridge oats
  • 110g coconut sugar
  • 1 large egg
  • 75g self-raising flour
  • 1 tsp vanilla extract
  • 60g dried chopped apricots (these could be swapped for raisins or dates)
  • 100g butter
  • pinch of salt
  • 50g ground almonds (not required, but add a gorgeous taste and extra goodness)

The Steps:

Step One: Preheat the oven to 160°. Grab your baking tray and place some baking paper on it

Step Two: Melt the butter and mix it with the sugar in a large bowl, add the egg and beat it together. Fold in all remaining ingredients. If the mixture seems too dry, add a splash of milk.  

Step Three: This is the part that gets gooey! Using your hands, shape the cookie dough into the size you want and place it on the baking tray. We go for normal cookie size and get about 15 cookies from this recipe.

Step Four: Bake in the oven for 10-15 minutes, depending on your cookie size.

Step Five: Enjoy and remember that they are perfect for freezing!
