Banana Buttermilk Pancakes: A Fun and Easy Recipe to Make with Kids

Grab these ingredients:
- 250g self raising flour
- 1 large banana (mashed)
- 300ml buttermilk
- 200ml milk (plant or diary based)
- 1 teaspoon of vanilla essence
- 1/2 teaspoon of salt
- 1 teaspoon bicabonate soda
- 2 tablespoons of sugar, we love coconut sugar or golden caster sugar
- 2 Eggs
- 85g of unsalted melted butter ( extra needed for cooking)
- Handful of Choc chips if adding
The Steps:
- Grab a large mixing bowl and sift together bicabonate soda, sugar, salt and flour the mix.
- In a seperate bowl mix together the buttermilk, milk, 2 eggs. mashed banana and melted butter and stir until combined, super important not to over mix.
- Mix the dry and wet ingridients together.
- At this stage add the choc chips to the mix (if adding) and give a littel stir.
- Choose your frying pan/s and add a knob of butter and pour the batter in depending on how big you want your pancakes.
- Cook until golden brown each side and enjoy!
